I have coeliac disease, which is a serious autoimmune condition โ€” not a food preference or intolerance. When I consume gluten (found in wheat, barley, rye, and most oats), my immune system attacks my small intestine. Even a tiny amount โ€” a crumb, shared cooking water, or a utensil used on gluten-containing food โ€” can cause serious harm.

Please ensure my meal:
ยท Is prepared on a clean surface with clean utensils
ยท Is cooked in a clean pan (not one used for pasta, bread or battered food)
ยท Does not contain wheat, barley, rye, oats, malt, or soy sauce
ยท Is not dusted with flour or thickened with regular flour

My daughter has coeliac disease, an autoimmune condition where even tiny amounts of gluten cause intestinal damage โ€” even if she doesn't appear immediately unwell. This is a medical condition, not a preference.
